The congress opens at IFEMA Madrid, in Pavilions 12 and 14.
Tuesday 2 February 9 am to 8 pm
A second full day of talks, stages and the exhibition hall.
Wednesday 3 February 9 am to 6 pm
The last day closes earlier, at 6 pm.
What to taste
The Wine Edition
The wine space of the congress, “Wines from Spain”. Its activities are not included in the standard in-person ticket.
Madrid Fusión Pastry
The pastry stage. The congress also gives a Pastry Chef Revelation Award to young Spanish pastry chefs.

Food and drink companies show their products: 224 exhibitors in 2026.

Madrid Fusión is a chefs’ congress: for three days each winter the world’s chefs give talks, collect awards and meet suppliers at IFEMA Madrid, and visitors can buy a ticket to watch. The 2027 edition marks its 25th anniversary, and it is organised by Foro de Debate SL.
Chefs on stage and the revelation awards

- On stage in 2026: Quique Dacosta, Mauro Uliassi and Albert Adrià among the chefs.
- Also in 2026: Ferran Adrià, promoter of the elBulli Foundation, and Oriol Castro, Eduard Xatruch and Mateu Casañas of Disfrutar in Barcelona.
- Awards: revelation awards for a cook, a maître d’ and a pastry chef, and a prize for the best chef in Europe.

A bigger Madrid Fusión for the 25th
For 2027 the congress spreads out in IFEMA, keeping the ground floor of Pavilion 14 and taking all of Pavilion 12.

The 2026 edition was called Madrid Fusión Alimentos de España and ran from 26 to 28 January.
A table laid since 1725
In the old town, Botín, founded in 1725, is “the oldest restaurant in the world according to the Guinness World Records”, says the restaurant.

- Where: 17 calle de Cuchilleros, open every day from 1 pm to 11:30 pm.
